How are product shoots priced?

By the day or half-day, by the number of products and images, or per image for large catalogues, with retouching and usage licensing as separate lines. Quotes state the basis clearly.

Can the photographer source props and models?

Often yes, through stylists and agencies they work with regularly. Ask for it to be itemised so you can decide what is worth adding.
